I use a basic scone and as a baker I weigh (for accuracy) instead of measure But you can use any biscuit or spongecake :

1.5 lbs pastry flour
5 oz sugar
5 oz butter, room temp
1.5 oz baking powder
.75 pint milk
.25 tsp salt
1 Preheat oven 420°F
2 Sift flour, salt, and powder. Rub in butter.
3 Disslove sugar into milk. Add to dry ingredients until just combined.
4 Roll out to 1/2 inch thick and cut.
5 bake 15 minutes.
Place washed and cut strawberries with a couple tablespoons of sugar to macerate for a half hour on the counter.
Split the scone. Fill with a little (real) sweeteneed whipped cream and berries with some juise. add the top, add more whipped cream and berries with juice.

The working mother's Strawberry Shortcake
1 Twinkie
1 carton of frozen strawberries in heavy syrup
Reddi Whip
Remove Twinkie from wrapper. Place on dessert dish. Thaw strawberries to a pourable consistency. Pour strawberries over Twinkie. Top with Reddi Whip. Add extra Reddi Whip if you like.

1 can (16.3-ounce) biscuits (recommended: Pillsbury Grands Southern Style)
2 pints fresh strawberries, quartered
3/4 cup sugar, divided
1 teaspoon ground cinnamon
1 (8-ounce) container whipped topping
1 cup sour cream
Preheat oven to 350 degrees F.
Unroll biscuits, place on baking sheet and bake in the oven according to directions.
Meanwhile, in a medium bowl, combine the strawberries and half of the sugar. Let stand for 1 hour to meld flavors.
In a small bowl, combine remaining sugar and cinnamon.
Remove biscuits from oven; split the biscuits and dredge in cinnamon sugar; place on serving plate. Top biscuits with macerated strawberries.
Place whipped topping in a bowl and fold in the sour cream. Garnish shortcakes with a dollop of whipped topping mixture.
