How can I prevent my strawberry tart from being too juicy?

I like to bake the tart without custard so it is fruitier, but it gets sloshy. Can I add anything?

Sweetie,about an hour before cooking.Slice up your strawberries,and place them in a bowl.Sprinkle the strawberries with simple granulated sugar.Let them sit on the counter top until your ready you dont want to let them go too far,30-45 minutes before cooking your tart.With a slotted spoon,spoon the strawberries into your tart crust.Bake it,and as your baking it you can gradually add the juice that is in the bowl so that your tart/strawberries do not dry out.I would think that the strawberries being juice is a sign you have really nice strawberries,and that is good.You can control the juice by spooning gradually rather than placing the strawberries in the tart and allowing the juice to develop while baking.Another idea,would be to place some cornstarch and some sugar over the strawberries.Toss them in the cornstarch and sugar mixture(about a teaspoon-teaspoon and a half of cornstarch) and place in the tart shell.That would be a better idea for a "quick" tart.You toss your strawberries in the mixture and add it directly to the shell and bake.This will "thicken" the juice and make more of a sauce rather than a "liquid" juice.Good luck hun,and have a good evening.Enjoy your Tart!!!Sounds yummy.

Reply:You can add a small amount of unflavored gelatin or add some powdered instant tapioca pudding mix. Neither will mess with the flavor and it will help the filling set and stabilize.
Reply:Not sure what other ingredients you are using, but try mixing a little corn starch with the sugar. It will cook clear and thicken the juice.
