I want to make the perfect strawberry shortcake for my mum on Mother's Day?

But, alas I can't find a recipe that I like. I was hoping for a soft, moist cake, but the only ones I've been able to find are dry. Also, I would like it to be two layered. So please help?

Buy a box of hostess twinkies. Cut up strawberries and mix with jar of strawberry preserves. In a compote layer cut up hostess twinkies and the top with strawberrys. then final topping with cool whip. this is so easy. If you can't get hostess twinkies then substitute with eclairs, or angel cake.

Why not put all the ingredients of strawberry shortcake into a muffin? These rich, delicate muffins don't need another thing - they are perfect as is.



Ingredients

2 C. flour

2 tsp. baking powder

3/4 C. sugar

1/2 C. butter

1 egg

1 C. heavy cream

1 tsp. vanilla

1 C. diced strawberries, well drained



Directions

Preheat oven to 350 degrees. Grease 12 muffin cups. In large bowl mix together flour, baking powder and sugar. Cut in butter as for pastry until it is in small pea-size pieces. In small bowl mix egg, vanilla and cream then add all at once to flour mixture. Stir with spoon until blended. Gently mix in strawberries. Spoon into muffin cups and bake for about 25 minutes. Cool completely in pan before removing. Sprinkle with confectioners sugar to serve.
Reply:Just make a white cake mix (beat AT LEAST 3 min), and make 2 layers.... Whip 1-2 c. heavy whipping cream with 1/4-1/2 c. sugar until very stiff peaks. Put the whipped cream and sliced strawberries between the cooled layers, and piled on top of the cake (garnish with some whole berries with the stems)
