I need to make a simple raspberry or strawberry sauce to garnish cheesecake - how do I make it?

I'm thinking of a smooth, translucent sauce that can be used in a squirt bottle.

I agree with TJ about the jelly but if you want

in a saucepan add fresh berries, sugar and some water... cook on medium heat until it becomes syrup like... strain through a sieve

if you are going to add a liquor or flavoring to it add it after it is off the heat and has begun to cool a bit.
Reply:A quick way is to add a small(very small) amount of water to a jar of jelly(Jam is better). Heat in microwave and when it is warm and pourable, pour over a chilled cheesecake.
Reply:Blend about a pint of fruit with about 1/4 cup of water and sugar until smooth. Strain the sauce through a fine sieve to remove any lumps and seeds. Place in a squeeze bottle.



You could also add a touch of ginger, vanilla, or alcohol (Iike rum or schnapps) instead of the water for more complex flavor. Don't go too heavy if it's high proof though or the alcohol will come through too strong in your sauce. It can be added later little by little to taste.
Reply:You could by some frozen strawberries about 10oz (for a whole cheesecake). Heat in a pot, add cornstarch and let it cook til it turns clear. It should be cooled prior to putting on the cheesecake, but it will be eaiser to transfer to the squirt bottle while hot. You would have to strain it into a cup then pour it into the squirt bottle. This would make a HappyCooking!
