Can a strawberry cake be frozen?

I am planning on baking a cake containing fresh strawberries. If I make it a few days ahead of time and freeze the layers, will it ruin the texture of the strawberries? (Make them slimy or something?)
Can a strawberry cake be frozen?
I am a Pastry Chef for a coffee house and catering company, where we do special order cakes. I have not tried to freeze a cake containing fresh strawberries, but here are my thoughts.



Strawberries soak up a lot of water, so when you clean them, do not "wash" them in the traditional sense under running water; the berries will absorb the water and make them all soggy. Instead, use a damp paper towel to gently rub any dirt off them; you probably won't have to do very much.



If the cake recipe calls for adding pieces of fresh strawberry to the batter, I agree that the pieces should be cut very small. (This should help prevent the strawberries from releasing large pockets of moisture into the cake if you freeze and thaw it, making for a soggy cake.)



Once the cake is baked, cool it in the pan(s) for 10-15 minutes, then turn out onto a cooling rack until completely cooled. Double wrap each layer (unfrosted) in plastic wrap, then wrap in aluminum foil or seal in large zip-lock type bags or place in an airtight container for freezing. I'd thaw it at room temperature, pulling it out of the freezer the at least the day before you plan to continue preparation and serve it (earlier if your freezer is very powerful).



If you are concerned about what the final texture of the strawberries will be after the cake is frozen and thawed, can't you do a test run with another cake or a few cupcakes? This would be the best option.

Thaw it out.... ONLY.... in the Refrigerator.... for one - to - two days..... Then Serve!

Reply:It can be frozen, but it isn't worth it.



Frozen strawberries are nasty.



Do the berries go in the cake or between the layers? If it's between, then do the cake ahead of time and assemble it on that day. It'll be a much better cake.



Please don't freeze the berries, though. Eeewwww.

Reply:If the strawberries are cut small, then it shouldn't matter much.





If you're using whole strawberries or large slices, then there would be a lot of moisture that was frozen in one area, so the berries would have a bad texture and the cake in that area would be soggy upon thawing.
Reply:It will change the texture of the berry. Go buy a bag of frozen strawberries (or freeze a few yourself) to see what will happen. Are the berries in sugar syrup? If that is the case, then I would not worry, it will be fine. If they are suspended in cream, then both the cream and berries will suffer.
Reply:Let the cake cool completely. Then freeze each layer by them self. Then when you thaw the cake, let the layers thaw in the fridge, then let it sit on the counter to come to room temp. Then at this time put the cake together and frost it. This will help prevent the condensation build up. Thanks....
Reply:As I always say, why bake something to get it frosted. Please, even if it would take you more time baking, do not froze a strawberries cake, that'll spoil the freshness of the cake. Think about it.
Reply:yes i have been making cakes for many years you can put the cakes in the freezer just take them out 1 hour before you are ready to put thestrawberries on
Reply:YES IT CAN! you can make one or buy one ok. but you can only freeze it once or you will risk food poisoning. best to buy a fresh one cut it into the portions you would like then freeze what you dont need to eat then you can defrost one or two portions or the whole cake as you want. say you feel like a bit of cake just get a portion out of the freezer defrost it throughly then scoff it down.

Reply:Just like ice cream that has thawed and been refrozen, the water will freeze and damage the cell structure of the berry. The taste won't be much different but the texture of the berry will.
Reply:Strawberry cake is good for one thing-eat right away. I want a piece right now. Can I come over!!!
Reply:i asked my mother on this one she said that strawberry cake can not be frozen because when it thaws it will turn all soggy and wet and then no one will wanna eat it and it could be a potentially embarrassing situation.
