Strawberry short cake for a wedding cake?

We are making a strawberry short cake as our wedding cake. How do you make cool whip icing? and any good recipes for the cake?

Whipped icing can be bought from just about any cake decorating store. You can also use the Wilton mix found at Michaels. To make it easy use box mixes for the cake and just add fresh strawberries and whip cream for your filling. Then ice it in either more whip cream or buttercream to make it more stable. Don't forget whip cream needs to be refrigerated.

1 quart fresh strawberries (or more if you like)

1/2 cup sugar

8 ounces cream cheese, softened

1 cup powdered sugar

1 (8 ounce) container frozen whipped topping

1 (14 ounce) angel food cake, cut into cubes (I buy the cake already made)



Wash, stem, and cut strawberries in half.

Add sugar; toss to mix well.

Chill.

Beat cream cheese and powdered sugar well.

Fold in whipped topping and cake cubes.

Spread cake into an ungreased 13x9 dish.

Cover and chill for at least 2 hours.

Cut cake into squares; top with strawberries.
Reply:Fabulous and elegant! Adorn with only the freshest most plump juicy strawberries. Maybe a few dipped in chocolate and goldleaf for the eye to catch. Use a wonderful vanilla custard filling in between your layers of yellow sponge cake or white angel food. And for such a formal occasion as a wedding reception stick to fresh whipped cream. You could even make it sparkle with a sprinkling of some fine twinkly sugar crystals. But take caution to the need of refridgeration.

3 cups strawberries

confectioners sugar

6 biscuits or servings of sponge cake

whipping cream



Crush the strawberries lightly with a fork or slice them. Add sugar to taste and set aside to macerate for 2-3 hours at room temperature.



Prepare the biscuits or the sponge cake. When baked split the biscuits or slice the cake thinly. Layer the strawberries between the layers of biscuit or cake, then top with more berries.







COOL WHIP FLUFFY ICING



1 c. sugar

1/2 c. Crisco

1/2 c. butter

2/3 c. warm milk



Cream together sugar, Crisco and butter then gradually add milk. Beat on high speed until fluffy and white (about 5 minutes).

Whip the cream with just enough sugar to sweeten until soft peaks form. Dollop the whipped cream on top and serve garnished with a whole berry or a sprig of mint if desired.
