I understand that in broth it is protein - but where is the protein in strawberries and sugar? Because my jam has chunks of strawberries it is very hard to skim off without taking strawberries with it. How can I prevent it from forming in the first place?
What causes the foam/scum to form on strawberry jam?
Throw it away and next time buy a smaller jar and keep in the fridge after you open it.
