Does anyone have a recipe for a Strawberry Pie using Fresh Berries but NOT using cornstarch or cream cheese?

I'm trying to find a recipe for a strawberry pie that uses 2 pie crust but doesn't call for cornstarch or cream cheese.I've tried alot of recipes but they end up too juicy or just BLAH..Thanks

I would be interested in learning about your answers as I love strawberry pie.
Reply:What I'm used to----You can bake your own crust or just buy one and then cut your fresh strawberries and buy the strawberry gel and mix well, place in cooked shell, and cover the top with whip cream, serve very cold.
Reply:Just cut up the strawberries into a pre-baked pie crust, sprinkle some sugar over the top and cover with whipped cream.
Reply:Pie doesn't have to be hard...



Make pie shells.



Toss hulled strawberries with as much sugar as you want. personally, I'd smoosh the strawberries just enough to get a chunky consistency.



Put in pie shell.

10 servings2 cups sliced rhubarb 2 cups halved strawberries 1-1/4 cups sugar 1/4 cup MINUTE Tapioca 1 pkg. (15 oz.) ready-to-use refrigerated pie crusts (2 crusts) 1 Tbsp. butter or margarine PREHEAT oven to 425°F. Mix rhubarb, strawberries, sugar and tapioca in large bowl. Let stand 15 minutes.



PLACE 1 of the pie crusts in 9-inch pie plate. Fill with fruit mixture; dot with butter. Cover with remaining crust; seal and flute edge. Cut several slits in top crust to allow steam to escape.



BAKE 45 minutes or until juices form bubbles that burst slowly. Cool.
Reply:Double pie crusts mean the pie has to be baked. Most often, strawberry pies are not baked, but served fresh to best enjoy the fruit. They change considerably when baked. But you could use any blackberry, blueberry, or peach pie recipe and just sub quartered strawberries for the fruit. It doesn't have to be thickened w/ cornstarch; you can use flour, arrowroot, or instant tapioca as well.

"Fresh strawberries are piled into a pre-baked crust and doused with a yummy hot syrup flavored with almond extract and thickened with whipped egg whites. Then the pie is chilled, and decorated with whipped cream, mint leaves and sliced strawberries."

INGREDIENTS:

4 cups fresh strawberries

1 1/4 cups white sugar

1/2 cup water

1/2 teaspoon cream of tartar 3 egg whites

1/8 teaspoon salt

1 teaspoon almond extract

1 (9 inch) prepared graham

cracker crust



DIRECTIONS:

1. Wash and hull strawberries, slice into quarters.

2. Place sugar, water, and cream of tartar in saucepan, bring to a boil over medium heat. Cook, uncovered, until a small amount of mixture forms a soft ball when placed in cold water.

3. Beat egg whites and salt until very stiff. Stir in almond extract. Pour hot syrup slowly into beaten egg whites, beating constantly until thick and glossy. Spoon over strawberries in shell. Chill and serve.

2 (9 inch) unbaked pie crusts

1 1/4 cups white sugar

1/3 cup all-purpose flour 1/2 teaspoon ground cinnamon

4 cups fresh strawberries

2 tablespoons butter



DIRECTIONS:

1. Preheat oven to 425 degrees F (220 degrees C). Place one crust in a nine inch pie pan.

2. Mix together sugar, flour, and cinnamon. Mix lightly through the berries. Pour filling into pastry lined pan, and dot fruit with butter or margarine. Cover with top crust, and cut slits in the top. Seal and flute the edges.

3. Bake for 35 to 45 minutes, or until the crust is slightly browned.
Reply:Flour and sugar is a good substitute for the cornstarch. I made a strawberry/rhubarb crumb top pie on Saturday, tossing the sliced fruit with 1 Tbsp. of flour, a pinch of salt and cinnamin and 1/4 cup sugar, then poured into the unbaked crust, and topped with flour, sugar, cinnamin and butter made into crumbs. Baked @375 for 1 hour...delicious!
Reply:Preheat over to 450 degrees. Rhubarb goes great with strawberries. take a pie dough and place in 9 " pie plate, line dough with 2 tablespoons of flour, in a bowl place halved cleaned strawberries with 1 cup of sugar and 2 tablespoons of flour stir until all the strawberries are coated. Place into dough, dot with a teaspoon of butter pieces. use a lattice work top so the moisting evaporates while baking.

Bake on 450 for 15 min. turn down to 350 for 45 minutes.

Cool and serve with Hagendaz vanilla ice cream. MMMM good!

Prebake your pie crusts instead of the puff pastry %26amp; top with fresh strawberries before serving.
