Does anyone know how to put strawberry jam filling inside a cake without it collapsing?

Want to make a lemon cake with strawberry jam filling. Help!

wow, this happened tome a couple of weeks ago. I made a cake and tried to fill it with strawberries while having it bake in the oven. Since the strawberries have too much acid (acidic level ) this will work against anything that you have in the cake like yeast, baking powdrer, etc...

Also, the strawberries will then start to fall to the bottom of the cake.

The best thing to do is to bake 2 9inch cakes and then spread the strawberries on top of the bottom layer cake. I found out that this actually makes the cake more presentable, and covered with your favorite icing, it is a good treat when your guests find out that there are strawberries in the middle of the cake. I also had the same question as you so I bought a dessert book and this technique was used.
Reply:Bake two round cake layers. Instead of icing between the layers, use your jam. Then ice the whole cake with buttercream or whipped cream. This is really good with raspberry jam too!
Reply:Ok, carefully slice the layers in half (this will require 2 hands and a cake splitter). Spread the fililng (any kind) on one half of split layers, starting the one that's on the cake plate. Top with another half layer. Keep doing that, regardless of the messiness, until the cake is completed. Then frost it all over. You want it to look presentable- it wont if there are any bare spots.

I charge extra for some flavors, according to how much extra work it is.

For fillings, I charge just the cost of fruit fillings.

I like to add the fillings because it makes the cake so special that I receive repeat business from it.

HOW-TO FILL THE CAKE





Cut the end off a parchment cone (or use decorator bag with no tip on the coupler).

Fill bag with medium-thick icing.

Pipe ring of medium consistency icing around edge of bottom layer in order to prevent filling from seeping through the icing.

Allow icing to crust 30 minutes or so.

Spread filling generously inside ring using a small bent spatula.

Position the top layer of the cake, bottom-side-up, over the filling.

Let the cake set for awhile to settle layers together before icing it.
Reply:Try making two 9 inch cakes, then spreading the jam on top of one after it has baked and putting the second cake on top. You can frost the entire thing and hide the seams.
Reply:one of the best ways to secure the filling is to use the springform pan...after cutting the cake in half, put the bottom portion of the cake (base) inside the pan, spread the filling on top of it, make sure that the filling is at room temp..level it with spatula..then put the top portion and press it lightly to secure and seal it.

chill it inside the refrigerator for about 1 hour.(it would help to stabilized the filling)...release the cake from the pan and begin adding your frosting.
