What is the BEST recipe for STRAWBERRY LIQUEUR?

i'm gonna make some (well, lots of it, actually!) strawberry liqueur. I have at least 4 recipes for it, and i am confused as i dont know which recipe would yield the BEST STRAWBERRY LIQUEUR!

anyone who has made it... please share with me the best method... recipes ... thanks so much!

Strawberry Liqueur



1 pint fresh strawberries

2 1/2 cups vodka

1 vanilla bean

1/2 cup sugar syrup

4 cups water

1 lb sugar



Select full colored and plumb berries, avoiding stained baskets (sign of overripe or softened and decayed berries).

DO NOT wash until ready to use as water causes mold to form.

Rinse berries and place in a mixing bowl, lightly crushing to release flavor.

Add vodka and vanilla bean.

Stir and store in bottle in cool dark place for 3 weeks.

Strain mixture through dampened cheesecloth squeezing as much juice as possible.

Pour back into bottle adding sugar syrup to taste (1/3 to 1/2 cup per pint) and age another 3-5 weeks.

Dissolve sugar in water and bring to a boil.

Cool before using.

Fragolo (Strawberry Liqueur)



3/4 lb very ripe strawberries (wild if possible)

1 (1/2 inch) vanilla beans, crushed

1 3/4 cups sugar

1/2 cup water

1 1/3 cups grain alcohol or vodka



Rinse strawberries and hull.

Place in a 2 Quart jar with tight fitting lid. Add the remaining ingredients, seal, and steep for a month in a dark place. Gently shake them once or twice a day during this period.

After one month, pour the liqueur through a wire mesh strainer and into a bowl. Let the strawberries drain well. Strain again using a coffee filter or paper filter and then transfer the liqueur into a clear glass bottle.

Cork the bottle, let it set for about 7 months.

Strawberry Liqueur



750 ml fresh strawberries, stemmed and washed

375 ml sugar

500 ml vodka

250 ml water

2 ml lemons, zest of

5 ml orange zest

5 ml fresh-squeezed lemon juice



Crush strawberries and sugar together in a bowl.

Let stand for about 1 hour.

Transfer to a clean 2 L container and add vodka, water, lemon zest, orange zest, and lemon juice.

Cover and let stand in a cool, dark place for 2 days, shaking frequently.

Use a fine-mesh strainer to strain out solids.

Discard.

Transfer liqueur to clean container, cover and let stand for 1 week.

Rack or filter into final container.

Age for at least 1 month before serving.

Tip: Strawberries are easily bruised and mould quickly.

When making cordials with strawberries, it is important to use only fresh, ripe, unbruised fruit.

If berries have green tips or bruises, cut off these parts before using.

3 cups fresh strawberries, ripe and unblemished

1 1/2 cups sugar

2 cups 100% proof vodka

1 cup water

1 teaspoon fresh squeezed lemon juice

1 teaspoon orange zest

1/2 teaspoon lemon zest



Have on hand: Colander, cheesecloth



1. Wash and stem the berries.

2. In a bowl crush the berries and sugar together.

3. Let stand for 1 hour.

4. Transfer mixture to a clean 2 qt container.

5. Add vodka, water, lemon juice, and zests.

6. Cover and let stand in a cool dark place for 2 days, shaking several times each day.

7. Press the mixture through a fine mesh sieve, discard solids.

8. Transfer the liqueur to a clean container.

9. Cover and let stand for 1 week.

10. Filter into a decorative bottle with a tight fitting lid.

11. Age for at least 1 month before serving.



Notes:



The Strawberries – It's ALL about the strawberries so don't be using supermarket strawberries! Wait until July or August and buy them at a local farm stand. Ask for strawberries that are super ripe, almost too ripe. They will often sell them to you half price because they're harder to sell. You'll want to make the liqueur that very day because they will mold very quickly. Be sure to cut off any mushy or moldy parts as these will ruin your recipe.



Vodka: Don't buy the cheapest stuff which tastes bad, or the most expensive as the flavor is wasted. Buy the mid level stuff and look for it on sale. I got mine for $9.50 on sale for 1.75 liters.



Getting the Strawberries out of the liquid – Run the liqueur first through a colander which will catch 90% then use Cheesecloth to catch the rest of it. Place the cheesecloth loosely in the colander over a bowl, clip the cloth to the sides, and pour the liqueur slowly through. Rinse out the cheesecloth regularly. If you want the liqueur to be perfectly clear run it once more through a coffee filter which will be VERY slow going. Personally, I like it to have some natural strawberry stuff left in there – I don't want it to look like Kool-Aid.





For approximately 400 +/- ounces use these amounts instead:



1 flat of strawberries, or 8 quarts

One 5 pound bag of white sugar



Two 1.75 liters bottles vodka

1 refill of the 1.75 liter bottle of spring water (tap OK too)

8 tsp lemon juice (I used bottled)



*I didn't bother with the zest



Optional – you can also add glycerin if you wish. This is a liquid that's available at places that sell cake decorating supplies. It gives the liqueur more "mouth feel." I tossed in a small bottle only because I had some on hand, but don’t feel like you need to.



Have two plastic storage bins handy to put all the liquid into and to transfer back and forth - the kind you can use later to store stuff in your closet
